{"id":17988,"date":"2011-06-22T13:03:34","date_gmt":"2011-06-22T18:03:34","guid":{"rendered":"http:\/\/artofmanliness.com\/?p=17988"},"modified":"2023-09-30T20:22:34","modified_gmt":"2023-10-01T01:22:34","slug":"grilling-basics-building-a-better-burger","status":"publish","type":"post","link":"https:\/\/beta.artofmanliness.com\/leisure\/food-drink\/grilling-basics-building-a-better-burger\/","title":{"rendered":"Grilling Basics: Building a Better Burger"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"hamburger2\" src=\"https:\/\/content.artofmanliness.com\/uploads\/\/2011\/06\/hamburger2.jpg\" alt=\"Vintage hamburger ad advertisement treat to eat. \" width=\"400\" height=\"425\"\/><\/p>\n<p>Armed with a spatula in one hand and a cold beer in the other, there\u2019s no better way to celebrate summer than by hosting a cookout with friends.&nbsp; Whether on a beach in sunny California or at a backyard BBQ in North Carolina, I love entertaining around a fully loaded grill.&nbsp; There\u2019s just something primal and manly about watching raw meat roasting over an open flame.<\/p>\n<p>Of course, a cookout is never truly a cookout without our beloved hamburger.&nbsp; Yet, for all of its simplicity, it\u2019s one of those food items that can often fall flat.&nbsp; You know what I\u2019m talking about: From the burgers that resemble hockey pucks, to those that taste like lighter fluid, to the balls of meat that have you two bites into the bun thinking: \u201c<a href=\"http:\/\/www.youtube.com\/watch?v=Ug75diEyiA0\">Where\u2019s the beef<\/a>?\u201d<\/p>\n<p>Since we\u2019ve been spending the past few months covering kitchen fundamentals, and with the Fourth of July approaching, I figured it was a good time to provide my best tips and techniques for building a better burger.&nbsp; Of course, I realize this is a touchy subject.&nbsp; Giving an end-all-be-all recipe for a grilled hamburger is akin to telling a Southerner how to BBQ or a Midwesterner how to prepare Brats.<\/p>\n<p>In other words, I\u2019m approaching this subject with humility.<\/p>\n<p>Now that I\u2019ve made my point, please immediately refrain from the following at your next cookout: using frozen patties, adding in filler ingredients, flipping your burgers more than once, and pressing down on your burgers with a spatula while cooking.&nbsp; Whew, I think I got most of it out there. We&#8217;ll touch on these points again below, just to make sure.<\/p>\n<p>Moving on&#8230;what makes a great burger?&nbsp; I\u2019m glad you asked.&nbsp; Since we men love seeing things clearly, I\u2019ve outlined some of the key bullet points that will make you the king of your next summer cookout.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-17990 size-full\" title=\"Hamburger Patties\" src=\"https:\/\/content.artofmanliness.com\/uploads\/2011\/06\/Hamburger-Patties.jpg\" alt=\"Raw beef hamburger patty seasoned close up photo.\" width=\"500\" height=\"333\"\/><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>Creating a great burger always starts with using great ingredients!&nbsp; Fresh 80\/20 twice ground chuck is my preferred choice.&nbsp; This blend provides enough fat content to keep the burger juicy and flavorful.&nbsp; Personally, I prefer beef burgers; however, I realize many of us live by different dietary standards.&nbsp; Thankfully, the options are limitless:&nbsp; Lamb, Bison, Venison, Pork, Turkey, Chicken, Black Bean (Vegan), Mushroom (Vegan), etc. are all appropriate alternatives.<\/li>\n<\/ul>\n<div id=\"attachment_17995\" style=\"width: 610px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-17995\" class=\"wp-image-17995 size-full\" title=\"Ron-Swanson-Burger-Contest16\" src=\"https:\/\/content.artofmanliness.com\/uploads\/2011\/06\/Ron-Swanson-Burger-Contest16.jpg\" alt=\"A man staring at two other men and one man is eating a burger.\" width=\"600\" height=\"338\"\/><p id=\"caption-attachment-17995\" class=\"wp-caption-text\">It&#8217;s nice to be sensitive to others&#8217; dietary needs and preferences, but under no circumstances should you try to serve a turkey burger to Ron Swanson.<\/p><\/div>\n<ul>\n<li>Using your hands, loosely form (6 oz) patties.&nbsp; Do not overwork the meat while making the patties, otherwise the burgers will turn out tough.&nbsp; Try to make your patties a little bit larger than your bun as they will tend to shrink while cooking.<\/li>\n<li>Use your thumb to create a dimple or well in the center of the patty, as this will ensure that the burgers cook evenly without plumping up.<\/li>\n<li>I\u2019m a <a href=\"https:\/\/www.artofmanliness.com\/living\/food-drink\/1-pot-1-pan-5-ingredients-5-minimalist-meals\/\">minimalist<\/a>, and I want to taste the meat.&nbsp; Therefore, I only season my patties with kosher salt and pepper.&nbsp; Adding other seasonings or flavors is your personal choice.<\/li>\n<\/ul>\n<div id=\"attachment_17994\" style=\"width: 540px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-17994\" class=\"wp-image-17994 size-full\" title=\"L050354\" src=\"https:\/\/content.artofmanliness.com\/uploads\/2011\/06\/grilling.jpg\" alt=\"Vintage party and men grilling burgers painting illustration.\" width=\"530\" height=\"500\"\/><p id=\"caption-attachment-17994\" class=\"wp-caption-text\">Be sure you don&#8217;t get so wrapped up in talking to your buddy about the latest Art of Manliness article that you burn the burgers.<\/p><\/div>\n<h3 style=\"text-align: left;\">Method<\/h3>\n<ul>\n<li>Grill your burgers over high heat.&nbsp; Whether using gas, charcoal (skip lighter fluid and use a chimney starter instead), or an indoor grill pan, you want to make sure to grill your burgers over substantial heat to form that nice crust (flavor\/texture) that we all love.<\/li>\n<li>Avoid using your spatula to press down on your burgers while cooking.&nbsp; Why?&nbsp; Those flavorful juices are meant to stay inside the burgers&#8211;don\u2019t waste all that flavor by pressing out the juices just to make your grill sizzle.<\/li>\n<li>Flip your burgers only one time&#8211;about 3 minutes on each side for medium rare plus.&nbsp; Keep in mind that eating burgers rare or even medium does carry certain health risks.&nbsp; For the purist, you can always grind your own meat at home.<\/li>\n<li>If you get a flare up, cover the grill.&nbsp; Cutting off the oxygen should quell the flames.&nbsp; Otherwise, always keep a beer in your hand to put out the fire.<\/li>\n<li>Allow your burgers to rest for a few minutes before serving.&nbsp; This will ensure that the juices redistribute into the meat.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-17991 size-full\" title=\"Hamburger Toppings\" src=\"https:\/\/content.artofmanliness.com\/uploads\/2011\/06\/Hamburger-Toppings.jpg\" alt=\"Hamburger toppings onions, lettuce, pickles and tomato.\" width=\"500\" height=\"333\"\/><\/p>\n<p>&nbsp;<\/p>\n<h3>Accessories\/Condiments<\/h3>\n<p>This is where you can let your personality shine.&nbsp; Condiments and accessories turn a quality grilled burger into your own piece of art.&nbsp; I\u2019ve suggested some of my favorite items below:<\/p>\n<p><strong>Bun<\/strong> \u2013 Slice in half and lightly butter and toast on the grill before serving.<br \/>\n<strong>Cheese<\/strong> \u2013 American, Cheddar, Blue, Feta, Provolone, Jack, Swiss, Muenster<br \/>\n<strong>Greens<\/strong> \u2013 Lettuce, Watercress, Arugula<br \/>\n<strong>Onions<\/strong> \u2013 Red, Yellow, Sweet, Caramelized, Fried<br \/>\n<strong>Pickled<\/strong> \u2013 Pickles, Jalapenos, Peppers<br \/>\n<strong>Tomatoes<\/strong> \u2013 Vine ripened, Sundried<br \/>\n<strong>Condiments<\/strong> \u2013 Mustard, Ketchup, Mayo, Pesto, Thousand Island, BBQ Sauce, Guacamole, Tapenade<br \/>\n<strong>Accessories<\/strong> \u2013 Bacon, <a href=\"https:\/\/www.artofmanliness.com\/living\/food-drink\/how-to-make-a-perfect-over-hard-fried-egg\/\">Fried Egg<\/a>, Peanut Butter, Mushrooms, Avocado, Slaw, Fresh Herbs<\/p>\n<p>I for one enjoy keeping things simple.&nbsp; Here&#8217;s my recipe for a classic burger:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-17992 size-full\" title=\"Grilled Hamburger with French Fries\" src=\"https:\/\/content.artofmanliness.com\/uploads\/2011\/06\/Grilled-Hamburger-with-French-Fries.jpg\" alt=\"Grilled hamburger with french fries in the paper plate.\" width=\"500\" height=\"333\"\/><\/p>\n<h3>Classic American Hamburger<\/h3>\n<p><strong>Hamburgers<\/strong><br \/>\n1.5 lb 80\/20 Ground Chuck<br \/>\nKosher Salt<br \/>\nFresh Cracked Pepper<br \/>\n4 French Hamburger Buns, sliced<br \/>\nUnsalted Butter<\/p>\n<p><strong>Toppings<\/strong><br \/>\nAmerican Cheese<br \/>\nLettuce<br \/>\nSliced Tomato<br \/>\nSliced Onion<br \/>\nDill Pickle Chips<br \/>\nAssorted Condiments<\/p>\n<p>Preheat a grill over medium high heat.&nbsp; Divide ground chuck into 4 patties, using your thumb to create a small well in the center of each patty.&nbsp; Liberally season the patties on both sides with kosher salt and fresh cracked pepper.&nbsp; Lightly butter the cut side of each bun, and add to the grill for 60 &#8211; 90 seconds, or until just toasted and browned.&nbsp; Add hamburger patties over direct heat and grill covered for 3 minutes on each side for medium rare plus.&nbsp; Remove from grill (or top with cheese to melt) and rest 3 &#8211; 4 minutes before serving.&nbsp; Top with your choice of ingredients and serve.<\/p>\n<p><em><strong>So that&#8217;s my go-to recipe.
